This Festive Bikini – The Method
WHere is a home-style take on a cocktail found on the seasonal cocktail list. It's a party-sized pre-mixed which is bursting with tastes of a festive period, making it excellent for a celebration. Any leftover citrus syrup for morning drinks, desserts, or for additional servings of the drink.

Serves 10 servings
To make the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Combine all the components inside a pan, bring to a light boil, mixing until the sugar dissolves. After that, remove from the stove and leave to cool down fully. Pour into an sealable bottle, seal and store in the refrigerator, where it will keep for up to one month.
For the Cocktail Base: Mix every liquids in a big jug, allow it to infuse for an hour, then pass it through , ideally through muslin, so it's fully clarified.
When ready to serve: Measure 85ml from the cocktail base into a cocktail shaker packed with ice, and agitate gently for a minute to chill. Filter to a cold coupe glass or a similar vessel, decorate with some cranberries adding the final touch using a light spray with the mandarin essence above the glass.
